    This pistachio cake recipe is easy to make, tastes like pistachios, and because of the pudding mix, it has never turned out dry when I've made it!

    This is the perfect pistachio cake for St. Patrick's Day! My kids sure do enjoy it : ). I add a little green food coloring when serving this for St. Patrick's Day. It just seems to be the right thing to do! If you don't add it, the green color of the batter fades as the cake bakes. A few drops will guarantee you are on theme and have green cake!

    This pistachio bundt cake is super moist and flavorful. This is one of those cakes you can quickly whip together and tidy while baking. It would be wonderful to serve your guests!  Oh, and for those of you with picky kids, they don't need to know about the pistachio pudding. They will never know :)I

    Why I love this pistachio pudding cake

    It is moist. And it stays that way for days!

    St. Patrick's Day can be tough to make themed items for. So here is a green cake. And it's delicious!

    This recipe for pistachio cake is easy to make. Who doesn't love easy to make, especially when it's so delicious!

    Ingredients

    I had a hard time finding the pistachio pudding. I wasn't expecting the box to say JELLO on it! This is what the pudding looks like. And it's two of the small boxes that you will need.

    1 box yellow cake mix - I like Betty Crocker, but use your favorite or what you have at home.

    2 boxes of pistachio instant pudding. Take a good look at the picture above!

    1 cup canola oil

    1 cup club soda

    4 eggs

    1 cup chocolate chips

    5 drops of green food coloring (optional!)

     

    Substitution Ingredient tips

    As mentioned above, any yellow cake mix works. I have not tried anything besides yellow cake mix, so use your best judgment if you try something else.

    Pistachio pudding gets hard to find near St. Patrick's Day. Buy early. And don't be fooled by the big JELLO written on the box. You want instant pudding.

    Use sparkling mineral or carbonated water if you don't have club soda.

     

    Instructions

    Preheat oven to 325 degrees Fahrenheit.

    Step 1

    Mix the cake mix and pistachio pudding together. Then add the liquids. I give the eggs a quick beating before adding them to the batter.

    Beat the eggs (just a quick beat with a fork works) before adding.

    Step 2

    Mix all ingredients together until just combined. I use a hand mixer.

    Step 3

    Add food coloring and mix again.

    Fold in chocolate chip cookies (optional but delicious!).

    Step 5

    Pour into a well-sprayed bundt pan ( Bake at 325 for 45 to 60 minutes. Test with a toothpick to determine if done. My oven runs hot, so the cake was made in 45 minutes.

    Expert Tip

    Let the cake cook for 10-15 minutes in the bundt pan. Do you see how it is already pulling away from the sides, making removing it easier? Place a plate on top of the bundt pan and flip it.

    I usually sprinkle a little icing sugar on it before serving.

    FAQ's

    What If I want to use a regular cake pan?

    Do that! Adjust the baking time to what it states on the back of the box for the size of your cake pan. Test with a toothpick about 5 minutes before it is done, and continue to bake for a few minutes (and retest) if needed.

    Can I make pistachio muffins?

    Yes! This should make 24 muffins. Adjust baking time to 12-15 minutes. Always test with a toothpick to see if the muffins are fully baked.

    Ingredients

    • 1 box yellow cake mix I like Betty Crocker mixes
    • 2 boxes pistachio instant pudding
    • 1 cup canola oil
    • 1 cup club soda
    • 4 large eggs
    • 1 cup chocolate chips optional
    • 5 drops green food coloring optional

    Instructions

    • Preheat oven to 325 Fahrenheit.
    • Spray bundt pan well with baking spray
    • Mix first five ingredients together. I usually do beat my eggs a bit and then add them.
    • Fold in chocolate chips
    • Pour batter into a bundt pan.
    • Bake for 45 minutes to 1 hour. Check with a toothpick to ensure 'doneness'.
    • Cool about 10 minutes. If the cake is sticking in the bundt pan, run a plastic knife around it.
    • Turn onto your cake stand or pretty platter.
    • Serve with vanilla ice cream.
    • Enjoy!! Very tasty and very moist. Still as great the next day!!

    Notes

    You can substitute either 1 cup of chopped walnuts or 1 cup of chopped pistachios for the chocolate chips.
