    BELT Sandwich (Bacon, Fried Egg, Lettuce and Tomato)

    This BELT sandwich is a wonderful lunch or dinner sandwich.  Heck, if you feel like a big breakfast, this is perfect for that too!  With the addition of a fried egg, the bacon, lettuce and tomato sandwich is filling, delicious and has extra protein from the egg.

    Although thoroughly delicious, this sandwich can be messy too! That egg yoke may end up in places it shouldn't be! If you love sandwich meals, you will also enjoy this ceasar sandwich post with six different sandwich options. Or, if you have an abundance of garden tomatos, try this simple tomato sandwich.

    Bacon, Lettuce and Fried Egg Sandwich

    Now-a-days, we have almost forgotten the BLT sandwich.  It's such a quick and simple meal, especially if you cook the bacon ahead of time! Add a fried egg on top and you will definately remember this sandwich and put it in your meal rotation.

    Why I love this tomato egg sandwich

    • It's an old classic and it is delicious.
    • This is a simple sandwich to make and is filling.
    • I love tomatos. I also love bacon.
    • Most ingredients are staples that are already at home.
    • It feels fancy with the fried egg. That's such an easy step to add.

    Ingredients

    • Two pieces of bread slices (pick your favorite!)
    • Lettuce (pick your favorite kind of lettuce)
    • Tomato (I get the biggest tomato I can find, love big slices on my BELT sandwich.  I especially love nice ripe heirloom tomatoes)
    • Bacon (3 slices, if you are indulging.  If you have precooked bacon, it makes this a really fast sandwich.)
    • 1 egg (fried, of course.  I like mine sunny side up BUT, over easy is perfectly OK!)
    • Mayonaise (optional)
    • Salt and pepper at the end (optional)

    Prep. Tip

    Make your bacon ahead. Or you can buy good precooked bacon (Costco has some that is awesome). That makes this a quick sandwich to put together.

    Instructions

    • Make sure you have bacon ready!
    • Toast your bread.
    • Add mayo to the toast, if you want it.
    • Layer the lettuce, tomato and bacon on top of the slice of bread.
    • Add 1 fried egg.
    • Cut in half and serve.

    How can you not love this recipe?  It has your favorite bread.   And BACON.  Plus a fried egg!  Did I mention your favorite bread?  Yes, I know, yummm.

    It's the fried egg that makes eating this fun.  Gravity causes the yoke to drip.  But, it's ok.  You might want to eat this with close friends and family!  It's just so good but can get messy.

    Once you slice it, the yoke starts to ooze out.

    Can different eggs be used?

    Yes! The first few times I had this in a restaurant it was made with quail eggs.

    Can these be made ahead?

    I wouldn't. The toast would get soggy.

    The goodness just gets better when you eat it.

    Ingredients

    • 2 slices bread white bread
    • 1 leaf lettuce I prefer romaine
    • ¼ large Tomato slices
    • 3 slices Bacon 3 slices, if you are indulging. If you precook the bacon, it makes this a really fast sandwich.
    • 1 large egg fried
    • 1 tablespoon Mayonaise optional
    • Salt and pepper at the end optional

    Instructions

    • Make sure you have bacon cooked!
    • Toast your bread.
    • Add mayo to the toast, if you want it.
    • Layer the lettuce, tomato and bacon on top of the slice of bread.
    • Add 1 fried egg.
    • Cut in half and serve.

    Notes

    If making for a crowd, I would recommend precooking your bacon.  Or, if you have a favorite brand of precooked bacon, use that.
    Another perfect breakfast, lunch or dinner sandwich is the classic Western.

      I do this but weave my bacon and cook it in the oven, that way I always get a bite with bacon and it doesn’t seem to crumble apart. I also will break the yolk when almost done frying so it is cooked as well and doesn’t drip. Yum, yum.

      You asked and I tellin': What's not to like about an egg? Especially now that it is off the forbidden lists. I wasted my youth not eating eggs and butter and now it is all good, thank goodness I didn't heed the warnings about coffee. Now I tease my friends when they forget something. Should have drank some coffee!
