    Easy Berry Oatmeal Bake

    This is the best baked oatmeal recipe! It's a healthy baked oatmeal with berries, bananas, and eggs. It is filling, high fiber, delicious, and has an extra protein boost with a couple of eggs added. It's probably the healthiest meal I eat!  It's perfect for serving your whole family (or guests during the holidays). Or just make as a breakfast you eat for the next few days. This is a great meal prep recipe when you know mornings are going to be busy!

    I am a fan of oatmeal breakfasts and do often stock the fridge with easy overnight oats. Another great recipe when you have a busy morning and guests are these yogurt parfait bar ideas.

    Why I love this

    I especially love hot oatmeal recipes when it's cold outside. Baked oats with berries are hearty, filling and so full of flavor. You get to use up your ripe bananas too! It tastes delicious and you stay satisfied and you're not hungry shortly after breakfast. That's the best reason why I love it!

    This recipe also hits the spot when you are looking for a heartier meal for breakfast. What could be more filling than a serving of hot oats?

    This is also an inexpensive recipe when you use what you have. Overripe bananas are perfect in here. Do you have mixed berries or blueberries in your freezer? Use them up in this recipe! I also like using up a little honey in this also.

    Ingredients

    cup of mixed berries, bowl of oatmeal and cinnamon, bowl of mixed milk, eggs and vanilla
    • 2 large ripe bananas - I like using up my really ripe bananas. My kids always insist they'll eat them and there they are, waiting to be used in a recipe!
    • 2 cups mixed frozen berries. Frozen berries are great and way less expensive for this recipe. I buy a blueberry, raspberry & blackberry mix.
    • ¼ cup honey
    • 1 cup oatmeal (1 minute, quick oats or old fashioned all work)
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon
    • 1 cup milk - I use 1% but use what you have.
    • 2 large eggs
    • 1 teaspoon vanilla extract

    Substitutions

    For the frozen berries, you can use fresh berries, blueberries only, strawberries or raspberries only. I buy a big frozen bag of these from Costco and it's so economical!

    Other grocery stores also have inexpensive frozen mixed berries. Chopped-up apples are also another option! I have never made peaches in this dish, but frozen or ripe fresh peaches would be quite delicious.

    If you don't have honey handy, I've used maple syrup. It's a different but delicious flavor.

    If I have an opened oatmeal milk or almond milk container, I will substitute it for milk.

    Optional toppings

    I love toppings on my oatmeal, even when it's baked oatmeal.
    I usually do add milk or cream just before eating to make it more cereal-like.
    Pecans or walnuts are lovely on top. The nuts add a nice crunch to the texture.
    Drizzle some pure maple syrup or honey if you have a sweet tooth.

    Instructions

    Preheat oven to 375F Spray a 9 x 9-inch glass or ceramic dish with cooking spray (8-inch works fine too).

    Step 1
    Slice bananas into slices that are approx. ½ inch and spread them on the bottom of your baking dish.

    Step 2
    Top with 1 cup of frozen mixed berries, ½ teaspoon of cinnamon and drizzle 1 tablespoon of honey (or maple syrup) over the fruit.

    Step 3
    Cover with foil and bake for 20 minutes.
    While the banana and berry mixture is baking, stir together oats, baking powder and cinnamon. Set aside dry ingredients.

    Step 4
    In a different mixing bowl, mix milk, eggs, honey, and vanilla extract. I use a small wire whisk to mix well. Set aside wet ingredients.
    Remove bananas and fruit. Spoon dry oat mixture evenly over the fruit.

    Pour milk mixture over the dry layer.
    Add remaining berries on top.

    Place uncovered in oven for 30-35 minutes. The top should be golden brown and the oatmeal set. I usually get 6 nice-sized servings out of this.

    Storing and Reheating

    To store leftovers, place into a sealed container or wrap top of serving dish. Place in refrigerator and use up within 3 to 4 days.

    This oatmeal bake heats up well with a couple of minutes in the microwave. The texture and the flavor are just as good the next day. If you still have most of the casserole dish full of oats, it can also be heated in the oven. Preheat oven to 375F, heat for approximately 20 minutes. Test to see if it's hot enough but for my family, it is. Depending on the baking container, it may take 5 - 10 minutes longer.

    FAQs

    Does this recipe make oatmeal bars?

    No, these are not bars. You will be eating them with a spoon!

    Can I make this baked oatmeal with berries the night before?

    Yes you can! Just refrigerate overnight once it has cooled to room temperature. Plan to bake it covered with foil for approximately 20 minutes. Bake uncovered another 10 minutes and check center to see if it's hot.

    Why is my baked oatmeal runny?

    This recipe is baked not covered. I have found folks who's baked oats are runny have cooked it with foil on top. If your baked oats is a little runny, just bake another 10 minutes and the liquid will bake off. Let it rest for a few minutes prior to serving.

    An easy and delicious baked oatmeal with plenty of mixed berries!  Great to serve your whole family or guests.  I personally like to use this recipe for my breakfast meal planning since warmed-up leftovers are delicious!

    Notes

    This is easily a gluten-free recipe (confirm that oats are gluten-free)
    Recipe is vegetarian and different types of milk (oat, almond) can be substituted if making as a vegan recipe.
