These roasted rosemary potatoes take a little time but are worth it! They are crispy, delicious, and perfect as a side dish to many meals.

Roasted potatoes are inexpensive, delicious, and simple to make at home. This recipe uses minimal oil for crispy potatoes that won't weigh you down. They are healthier and lighter than deep-frying. I honestly would eat these any day vs. having an order of french fries!

Just some potatoes and a few simple ingredients to make these delicious roast-in-your-oven potatoes!
I use small potatoes and cut them even smaller so they cook fast and evenly. I bought the 3-pound bag and used half for this recipe.
When cooking at high temperatures, I use regular olive oil, not extra virgin oil. Vegetable oil also works.
Season with minced fresh rosemary or dried if you don't have fresh. I do reserve some to sprinkle on top as a garnish.
Coarse salt, like kosher salt, is perfect for that salty flavor roasted potatoes demand. If using fine salt, always use a little less.
Instructions
Preheat the oven to 400°F. I spray the pan with nonstick spray (to make cleanup easier). Yes, even when using oil for the potatoes.
Step 1
Cut potatoes into small evenly sized pieces. Roughly an inch big.
Step 2
Combine potatoes, oil, minced rosemary, and course salt in a medium bowl.
Step 3
Add potatoes to the baking pan, ensuring not to crowd them. Flip the potatoes halfway through (about 15 minutes) to ensure even roasting. Pierce the potatoes with a fork to see if the center is soft to know they are done. If potatoes are cut into small pieces (1-inch size), they are usually done in about 30 minutes.

Moisture content of potatoes may increase cooking time by a few minutes. Fresh potatoes tend to have more moisture.
Don't crowd the potatoes. You don't want them touching so that they roast better.

- 2 teaspoons Rosemary fresh, minced (if using dried use 1½ teaspoons)
- ½ teaspoon garlic powder optional
Instructions
- Preheat the oven to 400°F. Spray roasting pan with nonstick spray.
- In a medium bowl, combine potatoes, oil, minced rosemary, and course salt.
- Add potatoes onto roasting pan, ensuring not to crowd the potatoes. Turn potatoes at 15 minute point to ensure even roasting. Mine are perfectly done after 30 minutes. Piece potato with fork to see if center is soft to know they are done.
- Due to potato moisture content (different types and how fresh the potatoes are), they may need a few minutes more to crisp to the level you like.
