Instructions
Preheat the oven to 400°F. Spray roasting pan with nonstick spray.
In a medium bowl, combine potatoes, oil, minced rosemary, and course salt.
Add potatoes onto roasting pan, ensuring not to crowd the potatoes. Turn potatoes at 15 minute point to ensure even roasting. Mine are perfectly done after 30 minutes. Piece potato with fork to see if center is soft to know they are done.
Due to potato moisture content (different types and how fresh the potatoes are), they may need a few minutes more to crisp to the level you like.

Optional Seasonings include ½ teaspoon garlic powder and/or ½ teaspoon onion powder. Storage - May be placed in the refrigerator for up to 4 days in a closed container. I LOVE eating leftover rosemary roasted potatoes with breakfast. Perfect as a side to scrambled or fried eggs!
