    This easy 3-ingredient fruit cocktail upside-down cake is the perfect solution for busy weeknights or a weekend treat. With just some fruit cocktail, some yellow cake mix, and eggs, you can transform simple ingredients into a warm, comforting dessert. The golden, buttery topping and bubbling fruit filling create a delightful, tasty dessert.

    We are using simple ingredients. Forget complicated recipes and fussy techniques. This easy dessert requires just fruit cocktail, cake mix, and eggs, making it a simple dish for beginners and baking experts alike.

    This cake embodies the essence of fall comfort food. It's the perfect way to warm up your kitchen on chilly evenings or bake it in the morning!

    This recipe takes the "fruit dessert" concept and simplifies it beautifully. Three ingredients and minimal prep work create a dessert that requires minimal effort – perfect for busy schedules or spontaneous cravings. This isn't a fancy dessert for a formal dinner. It's a good tasting easy dessert when you want something delicious and fast. And you aren't sure what to do with those cans of fruit cocktail you find in your cupboard - lol.

    This fruit cocktail upside-down cake is guaranteed to be a hit with everyone at the table. Its simplicity, warm flavors, and ease of preparation make it a perfect dessert for a quiet night in.

    Ingredients

    • 2 cans (21 oz each) fruit cocktail
    • 2 eggs
    • 1 (15.25 oz) box yellow cake mix

    Instructions

    Step 1
    Preheat your oven to 350 degrees F. Use nonstick spray in your 11 x 13 inch baking pan.

    Step 2 
    Drain the juice from the fruit cocktail cans and set the juice aside. You will use it in the next step.

    Spread the fruit cocktail evenly in a flat layer in your 9x13 inch baking pan.

    Step 3
    Add the cake mix and eggs to the large bowl with the fruit cocktail juice. Mix until well combined.
    Pour the cake batter over the fruit cocktail layer in the baking pan. Do not stir the fruit into the batter.

    Step 4 
    Bake for 30 minutes, or until the top is a golden brown. If testing with a toothpick to see if it's done, ensure you don't go to the fruit layer. That will be moist even when fully baked.

    Step 5 
    Let cool for 10 minutes before inverting onto a serving plate. Serve warm and enjoy! Vanilla ice cream is great on this.

    You have the option of serving it right side up OR

    How to Store and Reheat

    Store leftover fruit cocktail upside-down cake in an airtight container in the refrigerator for up to 3 days. I have never frozen this.

    To reheat, warm in the oven at 350 degrees F (175 degrees C) for about 10 minutes or until heated through.

    FAQs

    Can I use homemade fruit cocktail?

    Yes. But make sure to add a cup of fruit juice to the batter.

    Can I use any fruit for this?

    I've only made these upside down cakes with cake mix with the canned fruit cocktail and have also made an upside down cake with cake mix and fresh strawberries

    What if I'd like to add gelatin or jello to the fruit layer?

    I did that with the strawberry upside-down cake. Please take a look at that recipe to see if that is what you are trying to do.

    Ingredients

    • 1 box yellow cake mix
    • 2 cans fruit cocktail 15 oz cans (2)
    • 2 large eggs

    Instructions

    • Preheat oven to 350 ℉. Spray your 9x13 inch baking dish with nonstick spray.
    • Drain the juice from the fruit cocktail cans and set the juice aside. You will use it in the next step. Spread the fruit cocktail evenly in a flat layer in your 9x13 inch baking pan.
    • Add the cake mix and eggs to the large bowl with the fruit cocktail juice. Mix until well combined. Pour the cake batter over the fruit cocktail layer in the baking pan (do not mix).
    • Bake in the preheated oven for 30 minutes. Watch to see that it is a golden brown color on top.
    • Let cool for 10 minutes before serving.
      You can serve with the cake side on top OR, flip the whole cake on a platter and have upside down cake.
      My family loves a scoop of ice cream on this!

    How to store

    This stores well in the refrigerator for four days if the baking dish is wrapped or the dump cake is transferred to a sealed container.
