    Hamburger Soup

    I love this easy soup. It is surprisingly simple to make but tastes delicious! It's a healthy soup, full of vegetables and flavor. It is also meaty enough to satisfy as a meal. My kids enjoyed hamburger soup, and I think it's a very family-friendly meal.

    Ingredients

    Simple and inexpensive ingredients are used to make this delicious soup.

    1 lb lean ground beef
    diced onion
    garlic - either fresh or powdered
    potatoes that have been peeled and diced
    Diced tomatoes (the large can)
    Beef broth (or chicken broth)
    Worcestershire sauce
    1 teaspoon dried oregano
    1 teaspoon basil
    1 teaspoon parsley
    1 teaspoon dried garlic
    mixed vegetables (fresh or frozen)
    salt and pepper to taste

    Substitutions

    This recipe is very substitution-friendly. In fact, I like making it when I have vegetables in the fridge that need to be used up. Use fresh vegetables that you have on hand and then add some frozen to make a total of 3 cups.
    Hamburger soup traditionally has potatoes in it. But if you don't have them handy, a cup of small pasta can also work.

    Instructions

    Step 1
    Add oil to Dutch oven (or large pot) and brown ground beef with chopped onions. Add garlic and stir for another couple of minutes.

    Step 2
    Add the rest of the ingredients and bring to an easy boil then turn down to simmer (usually medium heat). Cook for approx. ½ hour stir occasionally. Check to make sure potatoes are tender.

    Step 3
    Serve in a bowl and garnish with freshly grated parmesan cheese and ground pepper if desired. If handy, add some fresh parsley as a garnish for color.
    Serve with fresh crusty rolls or a salad to round out the meal.

    How to Store and Freeze Leftovers

    This recipe usually has leftovers because it's a larger batch. It stores well in the fridge for up to 4 days.

    Freezing soup in plastic bags is a great way to freeze individual portions.  The frozen bags should lay flat when being frozen so they take up less room in the freezer.

    FAQs

    What is the difference between hamburger soup and chili?

    Chili has beans and much stronger seasonings (chili spice).

    Should hamburger soup be thickened?

    No, the broth doesn't need to be thickened. It is hearty just because of how much hamburger, vegetables, and potatoes are in it.

    • salt and pepper to taste

    Notes

    This soup freezes well.  I freeze in single or double portions in freezer bags, placed flat on a pan to freeze.
