I love this easy soup. It is surprisingly simple to make but tastes delicious! It's a healthy soup, full of vegetables and flavor. It is also meaty enough to satisfy as a meal. My kids enjoyed hamburger soup; I think it's very family-friendly.

Ingredients
Simple and inexpensive ingredients are used to make this delicious soup.
1 lb lean ground beef
diced onion
garlic - either fresh or powdered
potatoes that have been peeled and diced
Diced tomatoes (the large can)
Beef broth (or chicken broth)
Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon basil
1 teaspoon parsley
1 teaspoon dried garlic
mixed vegetables (fresh or frozen)
salt and pepper to taste

Substitutions
This recipe is very substitution-friendly. I like making it when I have vegetables in the fridge that need to be used. Use fresh vegetables you have on hand and then add some frozen to make 3 cups.
Hamburger soup traditionally has potatoes in it. But a cup of small pasta can also work if you don't have them handy.
Instructions
Step 1
Add oil to a Dutch oven (or large pot) and brown ground beef with chopped onions. Add garlic and stir for another couple of minutes.
Step 2
Add the rest of the ingredients and bring to an easy boil, then bring to a simmer (usually medium heat). Cook for approx. ½ hour stir occasionally. Check to make sure the potatoes are tender.
Step 3
If desired, serve in a bowl and garnish with freshly grated parmesan cheese and ground pepper. If handy, add some fresh parsley as a garnish for color.
Serve with fresh crusty rolls or a salad to round out the meal.
How to Store and Freeze Leftovers
This recipe usually has leftovers because it's a larger batch. It stores well in the fridge for up to 4 days.
Freezing soup in plastic bags is a great way to freeze individual portions. The frozen bags should lay flat when being frozen so they take up less room in the freezer.
