It seems like I have been asking my kids every single day to eat their vegetables! Today, I'm sharing a simple veggie dish called glazed carrots.
I'm trying to up my game a little in the veggie department. Trying to do just a little more than steam them and serve. The above carrots are carrots I loved when I worked for a catering company when I was in college.
Glazed carrots are really easy and use a few ingredients that you already have at home!
Ingredients:
2 lbs carrots, peeled and sliced (or you can use baby carrots)
2 TBS water
¼ cup honey
¼ cup salted butter
¼ cup brown sugar
Directions:
Steam carrots for about 5-7 minutes until they are crisp-tender. You want them just a little under done because you will be cooking in the glaze for another couple of minutes.
In a saucepan, start with about 2 tablespoons water, melt butter, then add honey and brown sugar. Keep the temperature on the low side because you don't want to scorch your butter .
Add steamed carrots and cook and stir them in your glaze for a couple of minutes.
Serve in a nice plate and garnish with parsley, if desired.
Funny story. Most bloggers garnish with parsley because it just makes a dish look pretty. My kid's looked at the carrots and asked, "What's the green stuff?" Just so you know, they are teenagers. I explained what parsley was. Parsley is an herb, it's healthy to eat, has a very mild flavor and makes a food dish look attractive. I thought we were having an 'adults' mature conversation about nutrition and food staging.
"Mom, don't put green stuff on my food." Yup, that's what the conclusion of our conversation was {sigh}.
But, the glazed carrots do taste good! They have a bit of a sweet and salty combination which makes the carrot flavor much more interesting.
If you do have picky eaters, don't put green stuff on their food : ).

I confess, I always ignore the "Garnish with..." line at the end of a recipe. Just can't be bothered! Maybe if I was hosting a dinner party but not for regular family meals. Feel free to send your teenagers here for dinner.
