Some days (many days), you just need a super simple go-to recipe. For me, it's my easy three ingredient chicken marinade. I'm almost embarrassed to share this as a recipe because it's so easy. But, I have been asked to share some more easy to prepare summer recipes. Seriously, if you want me to share something with you, just shoot me an e-mail or leave a comment and I'll be happy to do so!
I use this when I'm grilling chicken. I marinade the chicken for about 1 hour. Because it is citrus based, you shouldn't leave the chicken in the marinade overnight. A few hours are fine, just not days!!
TIP!! Cut your chicken breast in half. So that they are thin. That helps the marinade infuse the chicken with flavor. Plus, it makes cooking the chicken breast fast and it is easier to cook them through. Ever notice the big thick chicken breasts are hard to cook through and we often over cook them and then they are dry? Also, this makes the chicken breast a more reasonable portion size.
This is how I mean when I say cut in half. So you have to long, thin pieces.
Place chicken in a large zip lock type bag.
Now add the marinade:
Juice of 1 lemon (bottled lemon juice is OK if you don't have fresh lemons)
3 tablespoons Soya sauce (I prefer low sodium)
2 tablespoons olive oil (helps marinade stick to the chicken)
That's it! Just message the marinade around to make sure all the chicken is coated. If making a ton of chicken, just double the recipe.

Super easy, quick and tastes great! Don't forget to thin slice your chicken. It really makes a difference when you grill it. I always make extra. Leftovers can always be used for chicken salad sandwiches, wraps, and a chicken based stir fry.

I love all your simple recipes. This looks delicious. My sister-in-law makes something similar with salmon but she uses orange juice. I'll have to suggest this one to her. Thanks.

Thank you! Hmmmmm. I have never used orange juice in a marinade. I have used limes when I've run out of lemons. Will have to keep that in mind.
