Just some red-skinned potatoes and a small number of ingredients to make these delicious spuds!
I use small red potatoes then cut them even smaller so they cook fast and evenly. I buy the 3 pound bag and 1 ½ pounds for this recipe .
I use regular olive oil, not extra virgin when cooking at high temperatures. Vegetable oil also works.
I like to season red potatoes with paprika to make the red color stand out and add a little extra flavor to these red skinned spuds.
Coarse salt is perfect for that salty flavor roasted potatoes need. If using fine salt, always use a little less.
Pepper and garlic powder are also flavor boosters. If you are using garlic salt, make sure you reduce the salt. Some garlic salt blends are heavy on the salt. The best way is to use less at the beginning, and you can always add once cooked if you find they are under-seasoned to your liking.
Instructions
Preheat air fryer to 400°F. It only takes about 2 - 3 minutes. I spray the air fryer basket with no-stick spray. That is more to make clean up easier than anything else.
Step 1
Cut red potatoes into small, evenly sized pieces. Roughly an inch big. That helps with all pieces cooking consistently timewise.
Step 2
In a medium bowl, combine potatoes, oil, paprika, pepper, and coarse salt.
Step 3
Add potatoes to the air fry tray, ensuring not to crowd them. Mix every 5 minutes to ensure even roasting. Piece the potatoes with a fork to see if the center is soft to know they are done.
Optional
Taste potatoes and then add a light sprinkle of salt and or more paprika to taste. I like using parsley with potatoes as a garnish because I like the parsley flavor with the spuds.

Ingredients
- 1½ pounds red potatoes cut into 1 inch pieces
- 1½ tablespoons olive oil or vegetable oil
- 1 teaspoon Kosher salt or other coarse salt
- ¼ teaspoon pepper
- ½ teaspoon garlic powder optional
- ½ teaspoon paprika
Instructions
- Preheat the air fryer to 400°F. It only takes 2 - 3 minutes. I spray the air fryer basket with nonstick spray.
- In a medium bowl, combine potatoes, oil, and seasonings. Reserve some salt if you would like to have your potatoes less salty.
- Add cut up red potatoes onto air fryer basket, ensuring not to crowd the potatoes. Mix every 5 minutes to ensure even roasting. Mine are perfectly done after 15 minutes. Piece potato with a fork to see if the center is soft to know they are done. You should see the outside is browned and crispy.
- I garnish with a sprinkle of paprika for color and some chopped parsley. My family likes the taste of parsley with potatoes so I'm generous with it.
