This easy air fryer recipe for rosemary roasted potatoes satisfies your craving for crispy, flavorful potatoes without any hassle! This method delivers perfectly cooked potatoes in just 15 minutes, cooked in the air fryer. It’s fast, easy and so delicious.
Preheat the air fryer to 400°F. It only takes 2 - 3 minutes. I spray the air fryer basket with nonstick spray.
In a medium bowl, combine potatoes, oil, and seasonings. Reserve some salt if you would like to have your potatoes less salty.
Add cut up red potatoes onto air fryer basket, ensuring not to crowd the potatoes. Mix every 5 minutes to ensure even roasting. Mine are perfectly done after 15 minutes. Piece potato with a fork to see if the center is soft to know they are done. You should see the outside is browned and crispy.
I garnish with a sprinkle of paprika for color and some chopped parsley. My family likes the taste of parsley with potatoes so I'm generous with it.

Storage - May be placed in the refrigerator for up to 3 -4 days in a closed container. I LOVE eating leftover roasted potatoes with breakfast. Perfect as a side to scrambled or fried eggs!
