Just a handful of simple ingredients to make this delicious fall vegetable side!
Delicata squash
Olive Oil (just regular olive oil or avocado oil)
Kosher Salt (Pink Himalayan or regular salt works too)
Butter (I used salted, but unsalted also works)
Italian Seasoning - Your seasoning should be an herb blend and not an Italian dressing-type blend (look at the salt; herb blends don't have salt or have very little).
Instructions
Preheat air fryer to 400°F. I also like to line my air fryer basket and tray with some air fryer parchment liners. They help make clean up easy!
Step 1
Cut delicata squash from the stem end to the tip. It will require less effort than other squash. Scoop the seeds out and clean the inside.
Those seeds can be made into a delicious treat! Follow the steps to making my traditional roasted pumpkin seeds.
Step 2
Place the delicata cut side down and slice it into ½ inch slices.
Step 3
Drizzle and spread a thin layer of olive oil (I'll often use a pastry brush to spread the oil) on the surface of the squash slices, then season it with the Italian herbs and salt.
Step 4
Spread onto the air fryer basket, and try to leave some space between slices. Air fry for approx. 5 minutes, then flip the slices so the other side also cooks. Air fry for another 5 - 7 minutes until it is fork tender. Total cooking time is normally 10 - 12 minutes.
The time may vary by a few minutes depending on the size of the squash and how accurate the temperature of your air fryer is.
How to Serve
Serve the seasoned slices. Some people like a light drizzle of Italian dressing on these (to go with the Italian seasoning), or the Ranch dressing-addicted crowd loves to dip these. I had a picture when I dipped so here it is. Mmmmmmm so good! Picky kids would love these!
Storage
In a well-sealed container, this air-fried squash can be kept in the fridge for up to 10 days.
I don't freeze cooked squash because most uncooked squash lasts 2 - 3 months in a cool environment (some up to 6 months). I save my freezer space for other things.
