Air fryer delicata squash is a simple and delicious way to enjoy this versatile winter vegetable. ½ TeaspoonItalian seasoningThe mixed herb variety, not the really salty salad dressing kind.
¼Teaspoon Kosher saltor any other course salt (or a little less if using fine salt).
¼Teaspoononion powderOr garlic powder if you'd like it garlicky
Instructions
Preheat air fryer to 400°F. (3 - 5 minutes). I also like to line my air fryer basket and tray with some air fryer parchment liners.
Cut delicata squash from the stem end to the tip. It will require less effort than other squash. Scoop the seeds out and clean the inside.
Place the delicata cut side down and slice it into ½ inch slices.
Drizzle and spread a thin layer of olive oil (I'll often use a pastry brush to spread the oil) on the surface of the squash slices, then season it with the Italian herbs and salt.
Spread onto air fryer basket, and try to leave some space between slices. Air fry for approx. 5 minutes, then flip the slices so the other side also cooks. Air fry for another 5 - 7 minutes until it is fork tender. Total cooking time is normally 10 - 12 minutes.The time may vary by a few minutes depending on the size of the squash and how accurate the temperature of your air fryer is.
How to ServeServe slices with the skin still on. The skin can be eaten with this squash. Once cooked, it resembles an apple skin in consistency. Some people will cut it off but I don't feel it's necessary.
Notes
Storage - can be refrigerated in a sealed container for up to 3 days. I find people like dipping these. Ranch dressing is good on this!
