These are a simple yet flavorful side dish everyone will love. Convenient prepackaged carrots are tossed in a sweet and savory blend of honey, olive oil, and salt before being roasted to perfection in your air fryer. These delicious small carrots are a healthy and satisfying addition to any meal.

    I always buy the little packages of carrots then don't know what to do with them. THIS is the answer! Drizzle some golden honey to enhance the carrots' natural sweetness, and olive oil to add rich depth of flavor. A sprinkle of salt brings out the carrots' sweetness, creating a perfect balance of taste. These irresistible carrots are sure to become a family favorite.

    I'm actually using what I have in the fridge! Yay to finding a great way to use baby carrots!

    This carrot recipe has the perfect sweet and savory balance. The honey and olive oil with the sprinkle of salt creates an irresistible flavor combination.

    With just a few ingredients and minimal effort, you get a show-stopping side dish.

    There are no fancy sauces, so this is healthy and satisfying. Packed with nutrients and naturally sweet, these carrots are a guilt-free indulgence.

    Versatile and adaptable, they can be enjoyed as a side dish, in salads, or even pureed into a soup - the possibilities are endless!

    Ingredients

    Just a handful of ingredients that you probably have at home!

    Prepackaged baby carrots are so convenient but I often forget about them or don't want to snack on them raw!

    Olive oil is a healthy fat that adds richness and depth to the carrots. I use regular olive oil because it has a higher smoke point.

    Honey brings a touch of sweetness and caramelization to the carrots. Use your favorite honey for a personalized flavor profile.

    Kosher salt enhances the carrots' natural sweetness. The flakes dissolve evenly for consistent flavor. If using regular table salt, use a little less.

    Rosemary adds a fresh and bright flavor as a garnish after roasting the carrots. Use finely chopped parsley as an alternate option.

    Instructions

    Preheat oven to 400°F. Spray the air fryer tray with nonstick spray to help with cleanup.

    Step 1
    Drizzle oil, honey, and salt over the carrots and mix to make sure carrots are well covered with this mixture.

    Step 2
    Roast in the oven for 20 minutes until carrots are tender. I do stir them around the 10 minute point. Test for tenderness using a fork.

    Roasting Tip - The time needed for roasting will depend on how thick the carrots are and how soft you want them to be. Try to find a bag of baby carrots where the carrots are the same size.

    Step 3
    Serve promptly after optional garnishing. I usually sprinkle some chopped parsley or rosemary for color.

    Storage and Leftover Use

    Carrots can be stored in a covered container in the refrigerator. I don't freeze these because they get too soft after frozen and the freezer space is too valuable for an inexpensive (but delicious) vegetable.
    Use up the leftovers instead. Eat them as a side with another dish, cut them and use them in salads, or puree the roasted carrots and add them to a soup.

    FAQs

    Can this be made with regular carrots?

    Yes, just watch the cooking time. I also cut the large carrots into carrot sticks so the size is similar to baby carrots.

    How do I make these in a regular oven?

    You will need to make sure your oven is fully preheated. Expect to cook the carrots longer - probably 30 minutes. I do have an oven roasted carrot recipe for you to follow!

    Ingredients

    • 1½ pounds Baby Carrots
    • 1½ tablespoons olive oil
    • 2 tablespoons honey
    • 2 teaspoons Kosher salt
    • Parsley or rosemary optional garnish

    Instructions

    • Preheat toaster oven to 400°F (mine takes 2 to 3 minutes). Spray the air fryer tray with nonstick spray to help with cleanup.
    • Mix oil, honey, and salt into the bowl with the baby carrots. Make sure to mix until carrots are all covered evenly.
    • Roast in the oven for 20 minutes until carrots are tender. I do shake/stir them using tongs around the 10 minute mark.
    • I check by piercing into them with a fork.
      Roasting Tip - The time needed for roasting will depend on how thick the carrots are and how soft you want them to be.
    • Serve immediately after optional garnishing. I usually sprinkle some chopped parsley or rosemary for color and add some whole parsley sprigs to make the serving plate look pretty.
