    This easy air fryer recipe for rosemary roasted potatoes satisfies your craving for crispy, flavorful potatoes without any hassle! This method delivers perfectly cooked potatoes in minutes, thanks to the magic of hot circulating air in the air fryer. It’s fast, easy and so delicious.

    Air-fried foods are quick and flavorful. I've been using my air fryer for years and am making more recipes using that appliance. A few other sides include this air-fried cabbage. Who knew cabbage could be such a tasty vegetable? The same with brussels sprouts. Steamed, I really didn't like them. But when air fried, these air fryer brussel sprouts take on a whole new delicious flavor!

    Why I Love this Roasted Potato Recipe

    These roasted rosemary potatoes cook up in a flash when using an air fryer. They are fast and crispy and perfect to make on a busy weeknight.

    Rosemary adds a fragrant, earthy depth that elevates these potatoes beyond the ordinary. Every bite is delicious!

    Air frying uses minimal oil for crispy potatoes that won't weigh you down. They are healthier and lighter than deep frying.

    Cleanup is effortless. No more scrubbing greasy pans! The air fryer makes cleanup a breeze, leaving you more time to enjoy your meal.

    Ingredients

    Just some potatoes and a small number of ingredients to make these delicious spuds!

    With just a few simple ingredients like potatoes, rosemary, olive oil, and salt, you can create a delicious side dish that complements any meal.

    I use small potatoes then cut them even smaller so they cook fast and evenly. I buy the 3 pound bag and use half for this recipe.

    I use regular olive oil, not extra virgin when cooking at high temperatures. Vegetable oil also works.

    Season with minced fresh rosemary or dried if you don't have fresh on hand.

    Course salt is perfect for that salty flavor roasted potatoes demand. If using fine salt, always use a little less.

    Instructions

    Preheat air fryer to 400°F. It only takes about 2 - 3 minutes. I spray the air fryer basket with no stick spray.

    Step 1
    Cut potatoes into small evenly sized pieces. Roughly an inch big.

    Step 2
    In a medium bowl, combine potatoes, oil, minced rosemary, and course salt.

    Cut up potatoes with olive oil, minced rosemary and course salt added, ready to be mixed in. Sprig of rosemary sits on the counter beside the bowl.

    Step 3
    Add potatoes to the air fry tray, ensuring not to crowd them. Mix every 5 minutes to ensure even roasting. Piece the potatoes with a fork to see if the center is soft to know they are done.

    Optional
    Taste potatoes and then add a light sprinkle of salt and or rosemary to taste.

    Storing and Leftovers

    Place in a closed container and keep in the fridge for up to 3 days.
    I often use any leftover roasted potatoes the next day with breakfast. They are great with scrambled eggs!

    Equipment

    • 1 Air Fryer Oven Kind

    Ingredients

    • 1½ pounds potatoes cut into 1 inch pieces
    • 1½ tablespoons olive oil or vegetable oil
    • 1 teaspoon Kosher salt
    • 2 teaspoons Rosemary fresh, minced (if using dried use 1½ teaspoons)
    • ½ teaspoon garlic powder optional

    Instructions

    • Preheat the air fryer to 400°F. It only takes 2 - 3 minutes. I spray the air fryer basket with nonstick spray.
    • In a medium bowl, combine potatoes, oil, minced rosemary, and course salt.
    • Add potatoes onto air fryer basket, ensuring not to crowd the potatoes. Mix every 5 minutes to ensure even roasting. Mine are perfectly done after 15 minutes. Piece potato with fork to see if center is soft to know they are done.

    Notes

    Optional Seasonings include ½ teaspoon garlic powder and/or ½ teaspoon onion powder. 
    Storage - May be placed in the refrigerator for up to 4 days in a closed container. 
    I LOVE eating leftover rosemary roasted potatoes with breakfast. Perfect as a side to scrambled or fried eggs!
