Ingredients
4 medium Sweet Potatoes of roughly similar size. This ensures their required cooking time is the same. I weighed my sweet potatoes and they were all close to 6oz each.
I use Olive Oil for the skin of the potatoes so the skin cooks to a crispy texture. I use plain grocery store olive oil when cooking. Save your good quality extra virgin olive oil for your salads!
Topping Ideas (optional)
- Butter, salt and pepper (the traditional)
- Sour cream and chives (you can substitute plain Greek Yogurt) and a drizzle of honey
- Butter, brown sugar and a bit of cinnamon (pecans peices if you have them)
Instructions
Preheat air fryer to 400°F. It normally takes 3 - 4 minutes to preheat.
Step 1
Clean and dry the sweet potatoes. Pierce them a few times with a fork (I do about 6 times per potato).
Step 2
Cover each sweet potato with a thin layer of oil. I use a sauce brush, but you can also use an oil spritzer. Ensure the potato is fully covered.
Step 3
Arrange on basket and bake for 30 - 40 minutes. Turn sweet potatoes over at the 15 minute mark. Depending on the size of your potatoes, you may need to adjust your time. My 6oz potatoes usually take 30 minutes.
If sweet potatoes are bigger or have a larger diameter, they may take a few minutes more.
Cut into them with a sharp knife to see if they are soft to check if they are done.
How to Serve
Cut open lengthwise and squeeze ends together to make the inside fluff out. I also use a fork to fluff the sweet potato just a bit.
Serve with one or options of the topping ideas listed above. Below is the traditional butter, salt and pepper.
Do I eat the skin?
That is up to you. I love the skin of regular baked potatoes, but I don't normally eat the skin of baked sweet potatoes. I don't really enjoy the texture and sometimes find it can be bitter. I just love how the skin of an air fried sweet potato comes away so easily from the delicious inside.
Some people eat the skin, others don't.
FAQs
Nope, not necessary and it doesn't help. The foil tends to steam the potato. I like the peel to be a little dryer so that it comes off the sweet potato.
Just make sure the air fryer basket is not crowded. There should be space around each sweet potato. This may also slightly affect the cooking time.
Storage
Cooked sweet potatoes store well in the refrigerator for up to 4 days. Make sure they are in a closed container or well wrapped.
I also freeze the cooked ones (raw ones don't freeze well). The best way is to individually wrap each potato and then put it in either a closed container or a freezer bag.
