    3 Ingredient Pumpkin Muffins with Chocolate Chips

    Pumpkin muffins have a little history around here. My 2 ingredient pumpkin muffins were the very first food recipe I shared on Momcrieff, way back in 2011, and they’re still one of the most popular recipes on my site. These pumpkin chocolate chip muffins are the version I make when two ingredients just aren't quite enough - because sometimes pumpkin and chocolate belong together!

    Just like my original pumpkin muffins, these start with a box of spice cake mix and a can of pumpkin puree. Add chocolate chips and you have soft, moist muffins with plenty of pumpkin spice flavor and little bites of chocolate throughout. After making variations of these muffins for more than a decade, I can tell you there really isn't a much easier way to get a batch of warm pumpkin muffins on the table.

    Why I Love These Pumpkin Chocolate Chip Muffins

    • Only 3 ingredients – Spice cake mix, pumpkin puree and chocolate chips are all you need. No eggs, oil or extra spices required.
    • Quick and easy – The batter takes just a few minutes to mix together, making these perfect when I want homemade muffins without a lot of measuring or cleanup.
    • Soft and moist – Pumpkin puree gives these muffins a wonderfully moist texture and keeps them soft for days.
    • Pumpkin and chocolate – Warm pumpkin spice flavor and plenty of chocolate chips make these a delicious variation of my original pumpkin muffins.
    • Perfect for fall – I make these for an easy breakfast or snack, but they're also a simple treat to bring along to a fall get-together.

    They are super easy! Readers have told me this is the first recipe they make with their kids. With only two inexpensive ingredients (plus chocolate chips), they're a quick, easy and affordable treat.

    Ingredients for Chocolate Chip Pumpkin Muffins

    Yes, these pumpkin spice muffins with cake mix are so easy to make. Add pumpkin and chocolate chips to the cake mix and you are ready to go!

    The three ingredients for these pumpkin muffins includes pumpkin spice cake mix, a can of pure pumpkin and chocolate chips.

    1 box spice cake mix - any brand works. The spice cake flavor is what gives these muffins their pumpkin spice flavor.

    1 can  15 or 16 oz of pumpkin puree. The can may also be labeled as pure pumpkin. You want the small can. You do not want to buy the pumpkin pie filling.

    1 cup Chocolate Chips - I love milk chocolate chips, but dark chocolate or whatever your family's favorite chips are, they will work!

    How to make Pumpkin Chocolate Chip Muffins (easy)

    Preheat oven to 350 degrees F.

    Step 1
    Mix spice cake mix together with pumpkin and then stir in chocolate chips.

    Pumpkin spice cake mix, pumpkin puree and chocolate chips all mixed in a bowl ready to be portioned out into the muffin tin.

    Step 2
    Scoop into lined or well-sprayed muffins. Using a scoop helps the muffins be a uniform size and keeps the muffin tin cleaner (no drips).

    Using a scoop, the pumpkin muffin is evenly and neatly placed in each muffin well.

    Use a scoop to put the batter into the muffin wells. Perfectly portioned and less messy!!

    Step 3
    Bake 18 - 20 minutes. Test with a toothpick to see if done. The toothpick should come out clean.

    Storing Easy Pumpkin Chocolate Chip Muffins

    I store them in a well-sealed container in the fridge for up to 4 days. I like to let them warm to room temperature before eating them.

    These freeze well for up to 3 months. I recommend individually wrapping them and putting them in a container or freezer bag.

    FAQ's

    How to make pumpkin muffins without the pumpkin spice flavor?

    Use a yellow cake mix with a can of pumpkin puree. The muffins won't have the pumpkin spice flavor. You can add to just some cinnamon if you'd like!

    What can I add to these muffins?

    I have a friend who always adds pecans to hers. Walnuts would work too! Use about ½ to 1 cup of nut pieces. Or, add chocolate!

    I can't find a spice-flavored cake mix.

    That's happened to me before! Use yellow cake mix and add 1 ½ teaspoons of pumpkin spice. If you can't find pumpkin pie spice, make your own - How to make pumpkin pie spice

    Do I add all the ingredients listed on the back of the cake mix box?

    Nope. You use the dry cake mix, the can of pumpkin puree and don't forget the chocolate chips!

    Why can't I use pumpkin pie filling?

    Pumpkin pie filling has spices and extra ingredients that we don't need for this recipe.

    Ingredients

    • 1 box spice cake mix

    • 1 cup chocolate chips your favorite - milk chocolate, dark chocolate

    Instructions

    • Preheat to 350 degrees.

    Notes

    Make sure you are buying pumpkin puree, also known as 100% pumpkin. You do not want to buy pumpkin pie filling.  
    Muffins can be refrigerated for up to 4 days in a covered container.  I have also frozen these muffins (up to 3 months) by individually wrapping them and then keeping them in a big freezer bag.
