Ingredients
Just a couple of medium sweet potatoes and a small number of ingredients to make these delicious spuds!
I used two smaller sweet potatoes then cut them even smaller so they cook fast and evenly. I weighed them for you and these two weighed 1 pound.
I use regular olive oil, not extra virgin when cooking at high temperatures. Vegetable oil also works as does avocado oil.
Kosher salt is perfect for that salty flavor for your roasted sweet potatoes. If using fine salt, always use a little less. Substituting other coarse salt works.
Instructions
Preheat air fryer to 400°F. It only takes about 2 - 3 minutes. I spray the air fryer basket with no stick spray.
Step 1
Cut sweet potatoes into small evenly sized pieces. Roughly an inch.
Step 2
In a medium bowl, combine sweet potatoes, oil, and coarse salt. I usually reserve some to sprinkle on at the end.
Step 3
Add potatoes to the air fry tray, ensuring not to crowd them. Mix every 5 minutes to ensure even roasting. Piece the potatoes with a fork to see if the center is soft to know they are done. Mine are normally finished in 10 to 12 minutes. The difference in timing is because of the sizes of the pieces and how accurate the temperature is in your air fryer.
Storing and Leftovers
Place in a closed container and keep in the fridge for up to 3 to 4 days.
I often use any leftover roasted sweat potatoes the next day with breakfast. They are great with scrambled eggs!

- 1 pound Sweet potatoes cut into 1 inch pieces
- 1 tablespoon olive oil or vegetable oil
- 1 teaspoon Kosher salt
Instructions
- Preheat the air fryer to 400°F. It only takes about 3 minutes. I spray the air fryer basket with nonstick spray.
- In a medium bowl, combine potatoes, oil, and course salt.
- Add sweet potatoes onto air fryer basket, ensuring not to crowd the potatoes. Mix every 5 minutes to ensure even roasting. Mine are perfectly done after 12 minutes. Piece potato with a fork to see if the center is soft to know they are done.
- I usually taste and see if a sprinkling of a little more salt is needed at the end.
