Flavor - The combination of sautéed onions and mushrooms on a ricotta spread naan bread can be described as flavorful deliciousness! The smell of sautéed onions is just mouth-watering! And you can enjoy this on pizza!
Easy to Make Dinner (or Lunch) - This is such a simple meal to put together. It always amazes me how gourmet it looks and tastes!
Few Ingredients - This is a five-ingredient meal!
I can cook and bake with the best of them! But pizza crust isn't my favorite thing to make. I love using naan flatbread and just adding a few ingredients on top. Heat it for a few minutes, and you are done!
Convenience - If I know I have a busy week, I keep the groceries I need to make this on hand. Not only is this convenient, but it's cheaper and healthier than takeout!
Ingredients and Substitutions
Naan bread - It's a flatbread, and the name will specify Naan. The best Naan that I consistently buy is from Aldi. It's inexpensive, made with simple ingredients, and delicious.
Ricotta cheese - If you are tired of red sauce pizza, ricotta cheese is the best base for this type of pizza. It's part of why this flatbread pizza tastes so high-end.
Onions - I usually keep sweet onions on hand, so that's what I use. If you have other onions like yellow or even red, use them!
Mushrooms - Any mushrooms you can sauté work. If I'm buying mushrooms specifically for this meal, I usually buy baby portabella mushrooms.
Oil - I use either butter or a little olive oil to sauté. In this recipe, I used olive oil.
Instructions
Preheat oven to 425 ºF
Step 1
Slice your mushrooms and onions. I slice my onions into rings, then cut them in half so they are neater to eat.
Step 2
Add a teaspoon or two of oil to a medium-hot pan. Add onions and stir occasionally until they start to brown (3-4 minutes). Add mushrooms. I keep them in separate parts of the pan and pull the onion side off the direct heat.
Step 3
Give your naan bread a good schmear of ricotta cheese as the base 'sauce'. You're going to love this!
Step 4
Layer the sautéed mushrooms and onions onto the naan bread. I do mushrooms, then onions. Add salt and pepper to taste.
Sprinkle the mozzarella cheese on top.
Step 5
Bake for approximately 10 minutes in your preheated 425 ºF oven. I place a rack just higher than the middle of my oven. Watch for the cheese to be bubbly and start to turn golden brown.
Step 6
It's optional, but I like sprinkling some green herbs for color and a little flavor. I used chives in the recipe today. But, green onions, parsley or any other herb you enjoy on pizza works well.
Cut into four pieces.

Both need space since both onions and mushrooms release water when cooked. If making one naan pizza, I use one large pan. If you are making more, I will use two large pans (one for onions, one for mushrooms), making sure to spread your ingredients out so they don't get steamed.

- 2 teaspoon olive oil or butter
