This ham and swiss cheese casserole is my favorite way to use up leftover ham. Sometimes I just buy thick ham slices to cube for this recipe. It's a family favorite because the Swiss cheese is flavorful and melts wonderfully! Easy to adapt with your favorite family veggies so it is loved even by picky eaters!
2cupshamcubed (I bought two thick slices of boiled ham from my local deli - just under 1 lb of meat)
2cupselbow macaroniuncooked
2cancream of chicken soupor cream of mushroom
1canmilkuse the soup can!
1 ½cupspeas and carrots
1 canchicken broth
1smalloniondiced
8ozswiss cheeseshredded or sliced into thin strips
¼cupred pepperdiced
Instructions
Do not precook the noodles.
Preheat oven to 350 Fahrenheit
Place in sprayed 9 x 13 inch casserole dish
Add everything in a bowl and mix until noodles are covered with sauce. It's easier if you mix liquids first then add noodles etc.
Bake for 1 hour (stir at about ½ hour point so top noodles get mixed into sauce)
Serve with a salad for an amazing meal!
Notes
Another delicious family friendly casserole is this turkey noodle and cheese casserole.If storing in the refrigerator, place in a covered container (or wrapped) for up to 3 days. If freezing, place it in a sealed container. I try to use this up within a month if frozen.
