Watermelon Feta Salad with Mint
This is an easy three ingredient summer salad made with watermelon! The sweetness of the watermelon, the flavorful salty cheese and the spicy black pepper are a delicious combination

Ingredients
4
cups
watermelon
Chunks are cut into ¾ inch squares
½
cup
Feta
crumbles or small chunks
2
Tablespoons
mint
fresh mint, chopped and sprigs to garnish
Ground Pepper to taste
Instructions
Cut watermelon into 1 inch pieces.
In a large bowl, combine 4 cups of watermelon, ½ cup of feta cheese, and about 2 tablespoons of chopped fresh mint.
Gently combine. Season with cracked pepper and garnish with sprigs of fresh mint for color.
Notes
Refrigerates well for only 2 - 3 days. It all depends on how the watermelon holds up!
