This is such a delicious way to use fresh blackberries! This easy blackberry cobbler uses a layer of blackberries with natural sugar, then a layer of cakemix with thin sliced butter to create a delicious buttery crust.
Dump cleaned fresh blackberries into the baking dish.
Spread sugar on top of blackberries, being careful to spread evenly. If blackberries are a little sour, increase sugar used by ¼ cup (1 ¼ cup total).
Spread cake mix evenly over the blackberries. You are using the dry cake mix with no additional ingredients.
Thinly slice one and a half sticks of butter (¾ pound). The more slices, the better! Spread them on top of the cake mix.
DO NOT STIR.
Bake for 30-40 minutes. Watch for the color to be a delicious golden color.
If you notice at 30 minutes that there is dry cake mix, take it out of the oven and spray a bit of non-stick spray on the dry parts. Put it back in the oven for a few minutes (3 to 5 minutes).
Remove when done and let it sit for 5 minutes. Serve with ice cream or whipped cream
Notes
If you slice the butter thin enough, you should not have any dry cake mix once this is baked. If you do, spray a little baking or cooking spray on the dry spots and bake for 5 more minutes.A scoop of vanilla ice cream is always delicious on any baked good!
