Quick and easy: Roasting radishes is incredibly quick and easy. Unlike some other vegetables, they cook up in just 10-15 minutes, making them a perfect option for busy weeknights or when you need a last-minute side dish.
1poundcleaned radishes(The grocery store equivalent is the bag of radishes)
1 Tablespoonsolive oilor other neutral flavored oil
SaltKosher, or other coarse saltto taste
Instructions
Preheat air fryer to 400°F or oven to 425°FLine baking pan with parchment
Clean radishes (cut off top and bottoms), and cut in half. Sprinkle oil and mix until the radishes are all lightly covered. Turn all radish halves so cut side is down, which allows that side to start to brown. Sprinkle salt.
Roast in air fryer for approximately 10 minutes, shaking halfway through. Oven roasting may need an additional 5 minutes.Check with a fork for desired tenderness. I like them crisp-tender, so they have a little crunch when eating.
Test to see if there is enough salt and add more if desired. I also add fresh chopped herbs. I have been using chives because they are available. Dill, fresh thyme or parsley are also great options.

StorageThese roasted radishes can be stored for up to 3 days in a sealed container. I reheat them in a frying pan or in my oven.
