A delicious and easy-to-make dill pickle salad with a creamy and flavorful dill pickle dressing. Perfect for a large gathering or to bring along for a potluck. Ingredients are probably already in your pantry and fridge!
1poundpastasmall sized pasta appropriate for pasta salad
½cupMiracle Whip
½cupmayonaise
½cupsour cream
1cupcheddar cheese diced
1cuppicklesdiced - about 5 medium-sized pickles
½cuppickle juice
½red onion chopped
salt and pepper to taste
fresh dill or green onion as an optional garnish
Instructions
Cook one box (1 pound) of small pasta to al dente stage according to package directions. Rinse with cold water to stop cooking.
In a large bowl, place drained pasta and about ¼ cup pickle juice.
Stir occasionally. Let sit 5 to 10 minutes to allow the pickle flavor gets absorbed by the pasta.
Dressing
Mix mayonnaise, Miracle Whip, and sour cream until well combined. Add enough pickle juice to make dressing smooth and just pourable. The thickness of dill pickle dressing is a personal preference and totally depends on how much pickle juice you use.
Add dressing to drained pasta, along with diced cheddar cheese, pickles, and red onions.
Add salt and pepper to taste.
Mix all ingredients with pasta so the dressing evenly covers the pasta, cheese, onions, and pickles.
Notes
This creamy dill pickle pasta salad is easy and inexpensive to make. It is a perfect salad to bring to pass or to make if feeding a large group. This makes a big batch! Feel free to make half.
