Monkey Bread with Rhodes dough

A delicious breakfast or brunch dish for those times you want something a little more special.  This is perfect to serve overnight guests, for special family occasions including Christmas morning! Note that you assemble in the evening and bake in the morning!

Ingredients

  • ½ cup white granulated sugar
  • 24 roll dinner rolls Rhodes frozen dinner roles are the common kind used.
  • 1 teaspoon cinnamon
  • 1 package butterscotch pudding small 3.5 oz size, NOT instant pudding, not diet
  • ½ cup butter
  • ½ cup brown sugar.

Instructions

Assemble in the evening and bake in the morning!

  • Spray a Bundt pan generously with baking spray. (If you don't have one, a tube pan. Or, it also works in your basic 9 x 13 casserole dish. Tastes just as good but not as impressive looking).  Follow package directions for bake time if using something other than a bundt or tube pan.
  • Cut the frozen bread dough rolls in ½ or even fourths.  They are much easier to cut if you leave them thawing at room temperature for about an hour.  The smaller pieces allows all the gooy caramel sauce to cover better.
  • In a small mixing bowl, mix sugar (½ cup white sugar) and cinnamon together then pour the cinnamon sugar mixture evenly over the frozen dinner roll dough pieces.
  • Then, evenly spread the package of butterscotch pudding mix on top of the cinnamon mixture and rolls.  It looks like it's too much, but it isn't.
  • In a separate small bowl, melt butter (½ cup) and then add ½ cup of brown sugar.  This can quickly be done in a saucepan if you'd like.
  • You know what I'm going to tell you to do with that, don't you? Mix and drizzle evenly over the roll layer.
  • Trust me, it's worth it. All that sugar and butter and butterscotch pudding turns into the most delightful caramel
  • The next morning, turn the oven to 325 to preheat the oven
    When the oven is preheated, take the foil off and place in the oven.
  • I will put a baking sheet underneath to catch any of the caramal sauce that spills over while this is baking.
  • Make sure your rack is towards the lower portion of your oven so the top of your monkey bread isn't too close to the top element.
  • Bake about 30 minutes.
  • Watch closely during the last 5 minutes. The top will get really brown (and hard) really fast. You want that lovely golden color.
  • Slowly lift up the pan. I've never had a problem with it coming out. There is so much liquid caramel and the weight of the rolls make everything slide out easily.
  • If you have broken up pecans or walnuts spread over the top just before serving (totally optional).
  • This is such a delicious dish, it can certainly be served as a dessert.
