Quick and Easy English Muffin Pizzas

English muffins are used to make delicious, and quick mini pizzas.  Let everyone choose their own toppings. Great for when you are in a hurry or have picky eaters.

Ingredients

  • 2 English muffins French Bread and Italian bread works too! For a toddler, even a hot dog bun will do.
  • 2 tablespoon Pizza sauce Spaghetti sauce works in a pinch.
  • ¼ cup mozzarella cheese
  • 2 tablespoon chopped tomatoes
  • 8 slices pepperoni I like deli sliced
  • 2 leaves basil (optional) torn, if large.

Instructions

  • Preheat oven to 400ºF
  • I like to toast my English muffins for a couple of minutes (until they are just starting to brown) to make them a little crisper.
  • Layer your ingredients on your English muffins. I start with the sauce, add a little mozzarella, then add your favorite toppings.   Add more mozzarella on top.  So that you get that cheesy gooey goodness that holds everything together.
  • These take 5 to 10 minutes to bake.   Watch these closely!   I consider them ready when the cheese is all nice and melty but I know some people like the cheese to be a golden brown.  They go from having a nice golden brown color to being overcooked quickly.

Notes

Other topping ideas:
Ham, pineapple, salami, goat cheese, cooked crumbled sausage, or any additional toppings you would typically order on a pizza.
Can I make these ahead of time?
I would prepare all the toppings and have everything ready to assemble. The sauce may make the English muffins soggy if it sits on them too long before baking.
