Flavorful Sauteed Onions and Mushrooms Naan Pizza

This flavorful sautéed onion and mushroom side dish is quick and easy to make. It's the perfect recipe to make when you want a different side from your usual or, as a topping for steak or chicken.

Ingredients

  • 1 piece naan flatbread
  • ¼ cup ricotta
  • ½ cup mozzarella shredded
  • 1 medium onion I use either sweet onions or yellow onions
  • 1 8 oz baby portabello mushrooms or any other mushrooms you like
  • 2 teaspoon olive oil or butter

Instructions

  • Add a teaspoon or two of oil into a medium-hot pan. Add onions and stir occasionally until they start to brown.
  • Add mushrooms. I keep them in separate parts of the pan and pull the onion side off the direct heat.
  • Add salt and pepper to taste.
  • Spread ricotta cheese on Naan flatbread.Add sautéed onions and mushrooms on top of ricotta
  • Bake on the oven rack for approximately 10 minutes. Watch for the cheese to be bubbly and turn a slight golden brown.
  • It's optional, but I like sprinkling some green herbs or green onions for color and a little flavor. I used chives in the recipe today.

Notes

Can this be cooked on the grill?
Yes! Just watch for the bubbling cheese to know it's ready. You can put this directly on the grill or use a pan.
Why are my mushrooms and onions soggy when I cook them?
Both need space since both onions and mushrooms release water when cooked. If making one naan pizza, I use one large pan. If you are making more, I will use two large pans (one for onions, one for mushrooms), making sure to spread your ingredients out so they don't get steamed.
