Bruschetta with Fresh Basil

Delicious and flavorful with fresh tomatoes, basil, onions and garlic!  One of my most popular appetizers.

Ingredients

  • 2 tomatoes ripe and coarsely chopped
  • ¼ cup sweet onion finely chopped
  • ¼ cup basil lightly packed and chopped
  • 1 clove garlic finely minced
  • 1 tablespoon olive oil
  • 4 slices French bread.
  • 2 tablespoon Parmesan cheese Parmesan is optional

Instructions

  • After the tomatoes have been chopped, let them sit for about 5 minutes and drain the liquid.
  • Mix in onion, basil, garlic and olive oil.
  • Just before serving, add some of the Bruschetta mixture onto sliced bread.
  • If Bruschetta mixture is cold, broil bruschetta on the bread for a minute or two to warm it up.

Notes

To make these extra delicious, add some homemade garlic butter on the bread.
Also delicious made with Feta cheese instead of parmesan.
