Healthy Baked Oatmeal with berries.

Bake a layer of sliced bananas with frozen berries, 1/2 tsp. of cinnamon and a drizzle of honey.

Place in oven for 20 minutes at 375F.

Mix 1 cup oats, 1 tsp cinnamon and 1 tsp. baking soda in a small bowl.

In a seperate bowl, mix 1 cup milk, 2 eggs and 1 tsp of vanilla.

When the bananas & berries are soft, take out of the oven.  Add the dry oatmeal mixture and wet egg & milk mixture on top.

Top with 1 cup of fresh or frozen berries spread out evenly.

Bake for another 40 minutes.

Makes 6 nice sized portions.  I bake one early in the week and have breakfast for most of the week.  This is not a bar type recipe.
