French onion soup is a comfort food for me.   The croutons and the melted cheese on top are a bonus treat.

French Onion Soup

French onion soup can easily be a meal.  Perfect on its own for lunch. Many different options for the bread/crouton toppings

Why?

sweet onions,  butter OR olive oil,garlic, dry white wine, beef broth, Worcestershire sauce, bay leaf,dried thyme, Bread OR Croutons OR grated mozzarella cheese

Ingredients

In your largest, heavy pot, melt the butter (or use olive oil)  over medium heat.

Step 1

Add the chopped onions and saute until are  carmalized.   Stir regularly so onions become translucent   and watch closely so they don't burn!

Move the onions over, add a little  butter, and saute the garlic in that spot for a minute-ish.   Stir in the wine  or broth.

Add the stock and Worcestershire sauce.   Add bay leaf, and thyme.

Bring to a simmer for a few minutes, reduce heat to medium-low and simmer for a bit more!  Discard the bay leaf prior to eating or freezing.

If using bread slice to about 1 inch. Toast both sides, Then, put on a lightly sprayed pan, add your cheese on top and broil it - until it melts.

Use the above method if you are going to use either croutons or bread stuffing instead of a bread slice. The cheese will hold it all together!
